Veggie croque madame

Not quite the original but just as delicious, I love this version with spicy braised greens inside, it’s something different and feels almost healthy…

Braised greens (4 portions)

400g Cavolo nero
3 Garlic cloves (sliced)
1 Red chilli (seeds removed, sliced)
50ml Olive oil

  1. Start by pulling the centre stem out of both kales, this is far to tough to eat. In a large pan of boiling salted water cook the kale for 2 minutes, remove with a slotted spoon and leave in a bowl, no need for ice water.

  2. In a large pan over a medium heat add the olive oil and slowly cook the garlic and chilli until fragrant, around 2 minutes. Add the cooked kale, turn the temperature down to low and cook with the lid on for 10 minutes until very soft.

Croque madame (1 portion)

2 Slices sourdough
80g Mixed cheese (equal quantities gruyere, Munster, Brillat-Savarin)
2tsp Dijon mustard
Braised greens (from above)
25g Butter
Sliced Munster (optional)
1 Egg (Clarence court)

  1. Brush the inside of your bread with Dijon mustard, top with greens and cheese. Colour in a frying pan over a medium heat until browned on both sides.

  2. Cover with sliced cheese and put in the oven for 5 minutes at 180C.

  3. Fry an egg and place on top of the cooked sandwich.
